RAPINI

Rapini is an Italian vegetable that is commonly referred to as broccoli rabe.  The whole plant is edible which means that you can eat the stem, buds, and leaves. Italians love to eat rapini as it has a quite a unique flavour; both nutty and slightly bitter.

Roasted Rapini With Lemon and Parmesan

  1. 1 large bunch broccoli rabe, trimmed and cut into bite-size pieces​

  2. 2 tablespoons extra-virgin olive oil

  3. Heaping 1/2 teaspoon kosher salt

  4. Heaping 2 tablespoons grated parmesan cheese

  5. Juice of 1/4 lemon

  6. Heaping 1/4 teaspoon red pepper flakes

Garlic-Sauteed Rapini

  1. Sea salt 

  2. 1 lb broccolini 

  3. 3 lemons, seeded, 1 thinly sliced crosswise, 2 halved 

  4. Canola oil, for brushing 

  5. 1 small shallot, finely minced 

  6. 1 tbsp fresh lemon juice 

  7. 1 tbsp unsalted butter 

  8. 4 tbsp extra virgin olive oil 

  9. ¼ cup pine nuts 

  10. 1 tbsp flat-leaf parsley, finely chopped 

  11. 1 tbsp finely minced chives 

  12. Ground Aleppo chile, to garnish
